Sweetcorn Fritters

Ingredients

Method

  1. Sift the flour, baking powder, salt and pepper to taste into a bowl.
  2. Add the beaten egg, mixing to combine. Stir in the sweetcorn.
  3. Heat the oil in a frying pan.
  4. Drop spoonfuls of fritter mixture into the pan. Cook until golden then turn and cook the other side.
  5. Drain on absorbent paper. Serve hot.

Growing up, my mum and myself has always used Edmonds. My Mum's copy was falling apart, bought her a new one a few years ago. Always loved corn fritters.

Even tho I can’t eat much atm my family loves them u can have these with anything I love Edmonds grew up with all your recipes our favourite are these choco chip biscuits and piklets kids favourite with jam and cream my daughter loves peanut butter, I’ll leave her with that ❤️❤️

My go to recipe. I always add chillies, extra corn either out of a can or fresh off the cob, a spring onion and parsley and 1 tspn of cornflour for more crispyness.
